Sopapia Cheesecake

I thought I'd share this simple recipe with you all since it gets rave reviews every time I make it. It's an easy dish to make if you're going somewhere and need a dish to pass. I make it for Tristan's football dinners, and the guys (coaches included!) just love it. There are never any leftovers, and they request it every time.

Sopapia Cheesecake

2 cans crescent rolls
2 8 oz. boxes softened cream cheese
2 1/2 cups sugar
1 tsp. vanilla
1 stick melted real butter
1 tbsp. cinnamon

Lay one can of the crescent rolls in the bottom of a greased 9X13 pan. Cream the cream cheese, 2 cups sugar, and vanilla in a bowl until well mixed. Spread mixture over the crust in the pan. Top with the second can of crescent rolls to form top crust. Melt stick of butter in microwave. Add 1/2 cup sugar and 1 tbsp. cinnamon to butter and mix well. Pour mixture evenly over top crust. Bake in a preheated 350º oven for 30 minutes. Let cool before cutting and eating. Refrigerate any leftover portion.

What It's All About

I'm a 30-something mom with three children. I am visually impaired, and I work from home. Life is too short to sweat the small stuff. You have to live for the day, enjoy your family, and laugh as much as you can. This is how I live my life, having as much fun along the way as I can!
